“A soul-soothing, immune-boosting chicken soup with bold Italian flavors!”
This hearty, immune-boosting soup is the Italian version of classic chicken soup—packed with fresh vegetables, aromatic herbs, and a rich chicken broth, makes this the perfect comfort food for cold days or when you’re feeling under the weather. Serve with a sprinkle of Parmesan cheese and crusty bread for a truly cozy meal!

Italian Penicillin Soup
Ingredients
- 2 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 tsp sea salt
- ½ tsp black pepper
- 1 tsp dried oregano
- 1 bay leaf
- 6 cups low-sodium chicken broth
- ½ cup small pasta (like ditalini, stelle, or orzo)
- Grated Parmesan cheese, for serving
Directions
- Sauté the veggies – In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Sauté for 5-7 minutes until softened.
- Season & simmer – Add salt, black pepper, red pepper flakes, oregano, and bay leaf. Pour in the chicken broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add the pasta – Remove the bay leaf and stir in the pasta. Simmer until the pasta is tender (about 8 minutes).
- Serve & enjoy – Ladle into bowls, sprinkle with Parmesan cheese, and enjoy warm!
Notes
- Add a splash of white wine when sautéing the veggies for extra depth.
- For an even more elevated flavour, cook the soup with a Parmesan rind and remove before adding the pasta.
- Swap the pasta for rice or gnocchi for a different texture.
- Liven up this soup with a splash of fresh squeezed lemon juice right before serving.
- Spice it up and serve it with a drizzle of pepper oil.
- Store leftovers in the fridge for up to 3 days—the flavours get even better!
