Crispy around the edges, chewy in the middle—these Gluten Free Tahini Cookies are simply hard to resist. This recipe transforms 6 simple ingredients into a delicious vegan tahini cookie perfect for your tea or coffee break.

This recipe does not use any refined sugar or any other fat other than the mighty tahini itself. Tahini is a great ingredient as not only does it taste great but it’s also super rich in some key nutrients that you body actually needs (phosphorus, lecithin, magnesium, potassium, iron, calcium, vitamins E, B1, B2, B3, B5 and B15).

Gluten Free Tahini Cookies

Ingredients

  • 100g tahini paste
  • 95g maple syrup or honey
  • ¼ tsp vanilla extract/paste
  • ¼ tsp salt
  • 100g almond flour
  • 3 tbsp sesame seeds

Directions

  1. Line two baking sheets with parchment paper or silicone baking mats.
  2. In a bowl, mix together all of the ingredients except the sesame seeds.
  3. Once the ingredients come together into a smooth dough, shape 1 tablespoon of the cookie dogh into a ball and roll in the sesame seeds and place them on the baking sheet. Repeat with the remaining dough to make approximately 12-14 cookies.
  4. Gently press each cookie ball with the bottom of a flat glass or measuring cup until it is about 7-8mm thick.
  5. Refridgerate for about 15 minutes and preheat the oven to 350°C.
  6. Bake the cookies 1 sheet at a time in the center of the oven for 8-10 minutes or ntil slightly light golden brown on the top.
  7. Allow the cokkies to cool on the baking sheet for 10 minutes, then transfer to a wire rack until completly cool.

    Notes

    • These cookies will last 1 week in an air tight container at room temperature.
    • These cookies will be soft immediately out of the oven. Be sure to let them cool on the cookie sheet before you try to transfer them to the sire rack.
